The Primo Grill Basics
Primo's Patented Oval Design
The unique patented oval shape delivers the highest cooking flexibility and efficiency of any other ceramic grill.
It creates two different and distinct cooking zones. If you’ve ever tried to grill a steak and vegetables at the same time it’s likely that the steak came out fine, but the vegetables came out too charred.
Or you had to roast the vegetable first, then keep them warm while you grill the steaks. We ran into the same problem. Now you know why we developed the Primo Oval.
Different Cooking Zones
The Primo Grill is extremely versatile, it can grill, roast or smoke. Just change the internal configuration and maintain the desired temperature to achieve the best tasting food imaginable.
Grilling Set Up
Use this set up, for the traditional BBQ set up. The charcoal covers the bottom and the food is cooked on two cooking grills. Simply but always tasty.
![]()
Roasting and Grilling Set Up
Use this set up to both grill and roast simultaneously. The patented design ensures that the temperature in the oven works for both methods at the same time!
![]()
Baking, Roasting and Smoking Set Up
This set up requires a much lower temperature, low and slow is the secret.
Are you new to ceramic grills and BBQ smokers? if so, there are many Primo Grill videos showing how to easily get the best out of your Primo Grill. It takes you through the basics of every cooking method in very clear steps.

Primo Control
Primo’s Oval Design gives you more control when cooking foods that require different temperatures and locations to the natural lump charcoal.
Commonly referred to as “two-zone” cooking, it’s the ability to simultaneously cook with direct and indirect heat. It’s similar to turning off half the burners on a gas grill, but Primo offers all the flavour of a natural wood fire!
Grill thick sizzling bone-in ribeyes while roasting farm fresh corn on the cob on the other side. Round ceramic grills may promise, but can’t deliver the extremely efficient cooking abilities of a Primo Oval.
Primo's Multiple Cooking Methods
Grill mouth-watering juicy cheeseburgers, bake authentic wood-fired pizza, roast a turkey, or smoke a beef brisket to tender perfection. Virtually any food and recipe can be cooked on a Primo Oval Grill.
A Primo Grill allows you to grill, bake, roast, smoke, sear, braise, sauté, barbecue, carmelise, flambé, broil, fricassee, pan-fry, baste, parboil, boil, poach, scallop, simmer, stew, stir-fry, and more.
Why Choose a Primo Grill?
-
Easy Air Control: The new 6 position aluminium damper top allows for more precise temperature control. It also features a hood for all-weather grilling.
-
Lower Air Control: The new 5 position lower air control slider allows you to adjust the airflow into the bed of charcoal. Utilize this new feature to precisely control the temperature in the grill while cooking.
-
Easy Life Hinge: The new hinge design reduces the force necessary to open the lid by 70%, making grilling a breeze for all our Primo users!
-
Amazing Flavour: The combination of our premium-grade ceramics and Primo Natural Lump Charcoal creates amazingly juicy food with true charcoal flavour. The ceramic shell helps food retain its natural moisture.
-
Exceptional Temperature Control: Cook as low as 150°F to smoke a salmon or to well over 850°F for sizzling steaks. Cook "low and slow" for multiple hours to enjoy a succulent leg of lamb or tender pulled pork
-
Lights Easily & Heats Quickly: You can be ready to cook in as little as 15 minutes; the same time it takes to preheat a gas grill. Another great feature of our Natural Lump Charcoal is that it can be re-lit multiple times.
-
Low Maintenance & Self Cleaning: Primo ceramic grills practically take care of themselves. Periodic inspections ensure that your grill will perform and look great for years. Our grills also work like a self-cleaning oven.
-
Weather Resistant: Primo ceramic grills are made to live outdoors. Our premium-grade ceramics, glazes and hardware are made to withstand extreme climates. You can depend on Primo Ceramic Grills wherever you live.
-
Premium Grade Ceramics: Primo ceramic grills are composed of a proprietary blend of natural materials to make the highest grade of ceramics available for superior heat and moisture retention. Use less fuel and reduce your cooking time.
Frequently Asked Questions
Why Doesn't Primo Use a Fire Ring?
The design of a firebox with a fire ring is an old design when Kamado grills were made out of fire brick material.
It was very difficult to achieve searing temperatures with this type of material without the firebox or base cracking. The design allowed a customer to remove the fire ring to place the cooking grate closer to the charcoal fire.
What is the Difference Between a Primo Ceramic Grill and a Gas or Charcoal Grill?
There are two main differences:
- Primo grills are ceramic and act like an insulator to hold in the heat and retain the natural moisture of food, so foods are incredibly juicy. Metal grills radiate heat and pull moisture from the food.
- Primo grills can be used as a grill, an oven, a roaster, and a smoker. Simply adjust the cooking configuration and airflow.
How Long Does it Take to Heat the Grill Before I Can Begin Cooking?
About 15 minutes. About the same time it takes to preheat a gas grill.
What Kind of Charcoal Should I Use?
Only natural lump charcoal should be used. Primo Natural Lump Charcoal is made from whole stock hardwood.
It gives food a natural wood fire flavour, burns clean, and burns longer than briquette charcoal. Also, natural lump charcoal can be relit for multiple cooks.
Can I Use Briquette Charcoal?
Yes and no. You can use standard briquette charcoal but it will not achieve the high temperatures or extended burn times of natural lump charcoal.
Do not use “Instant light” charcoal because the fumes will be absorbed by the ceramics and impart a “fuel taste” to the food.
How Do I Light the Charcoal?
Primo makes its own brand of paraffin fire starters. You can also use an electric starter, torch, chimney starter, or even a paper towel crumbled into a ball.
Do not use starter fluid because it will be absorbed by the ceramics and impart a chemical or fuel taste to your food.
How Do I Clean the Grill?
Primo grills are self-cleaning. The interior will blacken, but it does not need to wiped off.
To clean the grill and main grate of food residue, heat the grill to 315°C/600°F+ for 30 minutes. The exterior can be cleaned with soap and water or a household cleaner.
What Accessories Will I Need?
Heat Deflector Plates and Heat Deflector/Drip Pan Racks are an essential accessory for indirect cooking like baking, roasting and smoking.
Other popular accessories include: Baking Stone, Extension Racks, Grill Table, and Grill Cover. In the end, it really depends on what you plan to cook and the available space.
Do I Need a Grill Cover?
Primo grills are made to live outside. Many owners prefer a grill cover to reduce occasional cleaning of the outside, or to protect the surface of their wood grill table from the sun and elements, or for off-season storage.
Are the Ceramic Feet Included with each Primo Grill?
No. If you purchase a Primo wood grill table they are included. If you are building your own grill table or having your Primo Grill placed in an outdoor kitchen you can order separately.
